Breakfast to-go, featuring kefir, a nourishing fermented milk beverage. Look for a kefir with lactose-free or 99% lactose-free claim. For a dairy-free variation, substitute almond milk for the kefir. This smoothie is a full meal.

Ingredients

  • 1 cup plain lactose-free kefir
  • 2 tablespoons raw oats
  • 1/2 cup frozen blueberries
  • 1 cup arugula or kale leaves
  • ¼ teaspoon vanilla extract
  • 1/8 teaspoon cinnamon
  • 4 large ice cubes
  • 3/4 teaspoon 100% maple syrup or 3 drops of stevia extract

Directions

  1. In a blender, combine kefir, oats, blueberries, arugula, vanilla, cinnamon, ice cubes and maple syrup until uniformly smooth. Serve immediately.
