No Bean Beef Chili

Introduction

Kids enjoy customizing their own mugs of this chili with garnishes of sour cream, shredded cheddar cheese and sliced scallion greens. It makes a family sized batch. Leftovers will be welcome in a thermos at lunch time!

Ingredients

  • 2 lbs lean ground beef
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced
  • 1 large stalks celery, diced
  • 1 small serrano or jalapeño pepper, chopped (optional)
  • 2 Tbs ground chili powder
  • 2 Tbs ground cumin
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1 Tbs granulated sugar
  • 1 28-oz can fire-roasted diced tomatoes, undrained
  • 1 cup water

Directions

  1. Sauté the ground beef in a large skillet over medium heat. Crumble the meat into bite sized pieces as it cooks. When the meat is no longer pink, remove from heat and drain the fat off.
  2. Return the skillet to the heat and add the diced vegetables and optional serrano or jalapeño pepper. Turn the heat down to low, and cook, stirring occasionally until vegetables are tender.
  3. Add the spices, canned tomatoes and water. Stir. Simmer over low heat for 1 1/2 hours. Serve hot.
